At our restaurant, pasta is more than just a dish: it’s an expression of tradition and authenticity.
Crafted artisanally with ITALGI equipment and bronze-die extrusion, this essential process gives the pasta a distinctive rough and irregular texture, perfect for capturing and enhancing the flavor of sauces, seasonings, and any ingredient.
By adhering to traditional methods, we preserve the nutritional properties of the ingredients, resulting in pasta that is not only delicious but also nourishing.
The excellence of our pasta begins with the selection of flours. We use durum wheat semolina and ‘OO’ soft wheat flour from Molino Pasini, an Italian company with over 100 years of experience in producing superior-quality flours.
This renowned mill stands out for its use of the finest grains and modern milling techniques, ensuring an exceptional product.
To this premium flour base, we add fresh farm eggs, carefully selected, and entirely exclude water, creating a mixture with the perfect level of moisture. This balance imparts the pasta with its characteristic golden color, a soft yet firm texture, and optimal elasticity when cooked.
