What is Tonnarelli Pasta?

Tonnarelli pasta is a long noodle similar to classic spaghetti but with a larger diameter. It is traditionally made using a tool called La Chitarra (which means guitar in Italian). 

Its square shape and porous texture allow the sauce to adhere perfectly, making it the ideal choice for our Cacio e Pepe. 

Our bronze-die pasta is extruded in our own pasta factory, ensuring exceptional artisanal quality.

What Makes Our Cacio e Pepe Special?

We use a balanced blend of Italian Pecorino cheeses selected by our chef.

The pasta is placed inside a Pecorino Moliterno wheel accompanied by a ‘fonduta’ made with:

  • Pecorino Romano Cheese: with its characteristic saltiness
  • Pecorino Moliterno Cheese: with softer, sweeter notes and a deeply aromatic profile.

To this combination, we add the exclusive Kampot black pepper from Vietnam, globally renowned for its sophisticated aroma and complex flavor.

The Preparation Process

1. We cook the tonnarelli al dente, highlighting its firm texture.
